Food I've Enjoyed This Week
I've totally refocused this week with my healthy eating and have been really enjoying it as well. Here are three meals that I've had this week that I have really enjoyed both for taste and their simplicity!
1// Porridge Pancakes ~ I absolutely love these pancakes for a weekend treat. Super easy to make and a great consistency. Throw on some speedy fruit and it's a gorgeous sweet treat.
2// Warm Chicken Salad ~ Quick and easy. I cook up some chicken thighs with salt, pepper, garlic and mixed herbs and then pop it on top of a simple salad with beetroot for extra flavour.
3// Chilli Lettuce Boats ~ Another easy, throw together meal (are you catching the theme?). Left over homemade chilli con carne stuffed on to romaine lettuce leaves with a salad. Quick, easy, fresh and delicious!
