Recipe || Porridge Pancakes
Any holiday can be hard, right? You don't want to miss out on enjoying everything but you also don't want to ruin all your hard efforts with being healthy. Here is the perfect recipe for when you really want a treat but also don't want to go off track.
Porridge Pancakes
Ingredients:
* 40g porridge oats
* 30ml of milk
* 1 egg
* 2 teaspoons of natural sweetener
* 2 tablespoons of vanilla yogurt (fat free)
Method:
1: Weigh your porridge into a bowl and cover with the milk. Leave to soak for 20-30 minutes.
2: Crack in 1 egg and mix together well.
3: Add your sweetener and yogurt (check the consistency when adding the yogurt, you want it to stay thick and not too runny).
4: Spray a frying pan with Fry Lite (I find the coconut one is really good for this) and spoon in some of the mixture to create a round pancake shape over a low to medium heat. Use a spoon to mould the edges as the egg begins to cook and firm the pancake.
5: Flip when ready and repeat with the remaining mixture.
Pro-tip: I keep my ready pancakes in the oven to keep warm until they're all good to go.
Then add on your berries and drizzle with 1 tablespoon of honey (2.5 syns) for that added treat. All that is left is to enjoy them with the smug satisfaction of knowing you are protecting your loses!
